Air Fryer Fish Tacos

Ingredients

450g cod, cut into strips
200g red cabbage, sliced
60g polenta
50g spring onions
4 calorie-controlled cooking sprays
8 white corn tortilla wraps
2 jalapenos, sliced
1 medium avocado, sliced
2 tbsp lime juice
1 tsp salt
1 tsp ground cumin
1 tsp garlic powder
|¼ tsp cayenne pepper

Method

Step 1: Preheat the air fryer to 180˚C.
Step 2: For the slaw, toss the cabbage, spring onions, coriander, lime juice, oil and half of the salt in a medium bowl. Set aside until ready to serve.
Step 3: Mist the fish with cooking spray and season with the remaining salt. In a shallow dish, mix the polenta, cumin, garlic powder and cayenne. Coat 1/3 of the cod in the mixuture, turning the pieces to cover evenly.
Step 4: Mist the air fryer with cooking spray. Place the coated fish in the compartment, spacing evenly. Mist the fish pieces with cooking spray. Cook for 15 minutes, until the fish is lightly browned and flakes easily.
Step 5: Remove from the airfryer and repeat with the remaining fish.

Divide the fish, avocado, slaw and sliced jalapenos among the tortillas to serve.
