Spanakopita-topped Sourdough

Ingredients

100g spinach
50g sourdough bread, sliced
50g salad leaves
20g light feta cheese
1 egg
1 tsp sesame seeds
1 tsp fresh dill
½ garlic clove
A pinch of chilli flakes
Calorie-controlled cooking spray

Method

Step 1: Preheat the snack maker and preheat the grill to high.
Step 2: Rub the sourdough with the garlic clove, then mist the cooking spray and toast under the grill for approx. 1½ minutes on each side until golden.
Step 3: Mist the snack maker with cooking spray and toast the sesame seeds for approx. 1 minute, until just turning golden.
Step 4: Add 30g of spinach and stir for approx 3-4 minutes, until wilted. Mix in the dill and season to taste. Spoon the mixture onto the garlic toast and crumble over the feta.
Step 5:Mist the same pan with the cooking spray and fry the egg for 3-4 minutes, over a low heat, until just cooked.

Slide onto the spinach,season and scatter over the chilli flakes. Serve with the salad on the side.
