Stuffed Red and Yellow Peppers

Ingredients

200g minced beef
100g white basmati rice, uncooked
100g sliced mushroom
4 sprays calorie-controlled cooking spray
4 medium spring onions, chopped
2 medium red peppers, halved
2 medium yellow peppers, halved
1 medium courgette, chopped
100ml vegetable stock
4 tbsp parmesan cheese
1 tsp tomato puree
1 tsp dried mixed herbs
1 tsp dried basil
1 tsp salt
1 tsp black pepper

Method

Step 1: Preheat the air fryer to 180°C.
Step 2: Mist a large saucepan with cooking spray, add the minced beef and cook over a high heat until browned.
Step 3: Add the spring onions, courgette and mushrooms, fry for 2 minutes.
Step 4: Stir in the rice, stock, herbs and tomato puree.
Step 5: Cook for 15 minutes until the rice is tender and the stock has been absorbed, add extra stock or water if needed.
Step 6: Remove from the heat and season to taste.
Step 7: Deseed the halved peppers, fill with the rice mixture and sprinkle with parmesan.
Step 8: Place in the air fryer and cook for 15-20 minutes.

Garnish with basil and serve on a bed of salad.
