Oat and Raisin Cookies Recipe

Ingredients

200 g self-raising flour
125 g golden caster sugar
100 g low-fat spread
75 g light brown sugar
75 g raisins
50 g porridge oats
1 medium egg
½ tsp vanilla extract
A pinch of salt

Method

Step 1: Cream the low-fat spread, caster sugar and light brown sugar in a large mixing bowl until smooth. Add the egg and vanilla extract and beat until pale and smooth. Sift in the self-raising flour and the pinch of salt and mix until combined. Add the porridge oats and raisins and mix until combined. Cover and chill for 3 hours.
Step 2: Preheat the snack maker.
Step 3: Form the mixture into 16 small balls. Mist the snack maker with cooking spray and add a ball to the snack maker. Use the back of a wet spoon to flatten the tops of the cookies slightly, then cook for 10–12 minutes until golden at the edges. Repeat with the remaining batter.
Step 4: Transfer the cookies to a wire rack to cool completely.
