Peanut Butter Cookies

Ingredients

200g self-raising flour
125g golden caster sugar
100g low-fat spread
75g light brown sugar
65g crunchy peanut butter
1 medium egg
½ tsp vanilla extract
A pinch of salt

Method

Step 1: Cream the low-fat spread, caster sugar and light brown sugar in a large mixing bowl until smooth. Step 2: Add the egg and vanilla extract and beat until pale and smooth.
Step 3: Sift in the self-raising flour and the pinch of salt and mix until combined. Stir in the peanut butter and mix until combined. Cover and chill for 3 hours.
Step 4: Preheat the snack maker.
Step 5: Form the mixture into 16 small balls. Mist the snack maker with cooking spray and add a ball to the snack maker.
Step 6: Use the back of a wet spoon to flatten the tops of the cookies slightly, then cook for 10-12 minutes until golden at the edges. Repeat with the remaining batter.
Step 7: Transfer the cookies to a wire rack to cool completely.
