Ingredients
450g lean stewing steak, diced
400g tinned pinto beans, drained and rinsed
400g tinned chopped tomatoes
300g button mushrooms, halved
2 carrots, sliced into rounds
2 garlic cloves, crushed
1 onion, chopped
350ml vegetable stock, made with 1 stock cube
½ tsp salt
½ tsp dried oregano
¼ tsp dried thyme
¼ tsp freshly ground black pepper

Fresh thyme sprigs, to garnish
Method
Step 1: Preheat the slow cooker.
Step 2: Add the onion, mushrooms and garlic.
Step 3: Saute over a medium-high heat for 5 minutes, stirring occasionally.
Step 4: Add to the slow cooker with the steak, half of the beans and carrots.
Step 5: Put the remaining beans in a blender with, 1/3 of the stock and blitz.
Step 6: Add this mixture to the slow cooker along with the remaining stock, tomatoes, oregano, dried thyme, salt and pepper.
Step 7: Cover and cook on high for 6-7 hours.
Garnish with the fresh thyme and serve immediately.
