Turkey, Egg and Avocado Breakfast

Ingredients

2 40g slices granary bread
2 slices wafer-thin turkey
2 medium eggs
1 small tomato, thickly sliced
1 portion rocket, to serve
¼ medium avocado, peeled and pitted

Method

Step 1: Toast the bread.
Step 2: In a small bowl, mash the avocado, then spread it over the toast. Top with a slice of wafer-thin turkey and a slice of tomato.
Step 3: Lightly mist the egg poachers with the cooking spray and break 1 egg into each well.
Step 4: Place the removable tray back onto the egg cooker, with the egg poachers on top, and close the lid. Once the cooking process has completed, use a wooden spatula to carefully remove the eggs from the poachers. Season to taste.
Step 5: Put a poached egg on top of each slice of toast.
Step 6: Season to taste and serve with some rocket on the side.
